Quick and Easy FRIED RICE AND CHICKEN

A huge thank you to everyone who read my last post. Personally, I didn't expect the amazing feedback I got, so it's much appreciated. Now in my last post, you'll remember me sharing the recipe for my quick and easy jollof rice and chicken. However, as we all know, the rice camp in Nigeria is split almost evenly between Jollof Rice and Fried Rice. Now since people have requested the easy alternative for fried rice, here it is. This recipe is also ideal for those who like me have finally decided to jump on the fit fam wagon.

 

***This recipe serves four people

 

To prepare quick and easy Fried Rice, you'll need the following.

 

700g of easy cook rice

0.5 kg chicken portions

4 eggs

1 Medium sized cup of mixed vegetables

A hand full of sliced chorizo

1 medium sized onion

4 table spoons of sunflower oil (healthy option)

2 teaspoon of salt (this can be more or less depending on your taste)

6 knorr cubes (double-pack)

2 teaspoon of curry powder

2 teaspoon of thyme

2 teaspoon of garlic powder

 

Preparation

 

Chicken

 

Wash chicken and place in a pot and add 2 knorr cubes, a tea spoon of salt, 1 tea spoon curry power 1 teaspoon of thyme and 1 teaspoon of garlic powder. Add water and boil until soft. When done, pan fry the boiled chicken lightly using 2 table spoons of oil until light brown. 

 

Egg

 

Boil eggs for 15 minutes and leave in cold water for about 10 minutes to harden them.

 

Fried Rice

 

Start by adding the rice to a bowl and add hot water to reduce the starch. Do this a few times by leaving the rice in hot water for five minutes and wash with cold water each time.

 

To the chicken stock from the boiled chicken, add the rice and boil for 20 minutes. Add more water as desired. Add the ingredients to taste (2 knorr cubes,  teaspoon of curry powder, 1 teaspoon of thyme,1 teaspoon of garlic powder).

 

 

 

When rice is almost dry, add the mixed vegetables and chorizo to the pot and stir. Cover and leave until the water dries up. Cook on medium heat. 

 

 

Serve as you wish.

 

 

 

The cooking time for this should be about an hour. This recipe is very ideal for mixing it up when you're to tired to cook but want something delicious. This is also great for meal preps especially during busy periods.
