Hiya people,
In previous posts, I’ve shown you how to make Jollof Rice and Fried Rice. However, for those of us who like our standard white rice, this is a recipe which I believe is ideal for a nice rice and stew dinner. Quite easy to make. The spicier, the better.
***This recipe serves four people
To prepare Fried Dried Fish Sauce, you'll need the following.
1 pack of dried fish (from any African food shop
4 eggs
1 red bell pepper
1 medium sized onion
1 teaspoon of locust beans
1 scotch bonnet
1/2 teaspoon of salt (this can be more or less depending on your taste)
2 knorr cubes (double-pack)
1 teaspoon of curry powder
1 teaspoon of thyme
1 teaspoon of garlic powder
2 tablespoons of palm oil
Preparation
Eggs
Boil eggs for 15 minutes and place in cold water to cool
Sauce
Blend 1 scotch bonnet, 1 red bell pepper and 1 medium sized onion.
In a medium sized pot, add 2 tablespoons of palm oil and heat. When hot, add the blended sauce to the hot oil and the dry fish and leave to cook for 5 minutes.
Add the spices, the boiled eggs and the locust beans. Leave to cook for a further five minutes.
Serve with white rice or agege bread (for my naija people)
