Hey y'all,

I’m back with another recipe that will serve you well with those friends of yours who can’t do without traditional Nigerian foods. A lot of people requested this particular recipe because they think it’s difficult. Well, this blog post will show you how easy Nigerian moin-moin is to make. This mouth-watering recipe is one to add to your potential Saturday breakfast menu.

***This recipe serves eight people

To prepare Moin-Moin, you'll need the following.

1 kg of beans

½ cup of sunflower oil

3 red bell peppers

1 scotch bonnet

1 large onion

4 eggs

1 teaspoon of salt (this can be more or less depending on your taste)

2 Knorr cubes (double-pack)

1 teaspoon of curry powder

1 teaspoon of thyme

1 teaspoon of garlic powder

1 tablespoon of Jumbo chicken stock powder

2 litres of water



Boil eggs for 15 minutes and place in cold water to cool


Soak the beans in warm water for 1 hour and peel after. Alternatively, you can place the beans in a blender with water and blend for 2-3 seconds, then pour into a bowl and peel as much as you can.

After this, place the peeled beans back in the blender with the red bell peppers (sliced), the scotch bonnet and the onions (sliced).

Add water to the blender and blend until smooth. Try to make it slightly watery to end up with the moin-moin soft and smooth.

Once this is done, pour the blended mixture into a mixing bowl and add the spices to taste.

Cut up the boiled eggs and add to the mixture.

Place a ladle full of the mixture into freezer bags or foil containers and tie/seal.

Place these in boiling water and cook for 1 hour.

Serve as desired. This can be with pap, gaari or even as a side with a rice dish.
